Luxe Fitness' Recipe of the Month is Wildblends Banana Bread Baked Oatmeal, please find Zoe's delicious recipe below:Ingredients:

  • 2.5 cups rolled oats

  • 3 very ripe organic bananas

  • 1/4 cup coconut milk

  • 2 organic eggs 

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 2 tsp virgin coconut oil

  • 1 tbsp coconut sugar 

  • Our tip: Add dried fruit, seeds or nuts to taste 

Method:

  • Preheat oven to 175°C.

  • Place bananas, coconut milk, eggs, coconut oil and sugar in a high speed blender and blend until smooth.

  • In a seperate bowl mix oats, baking powder and cinnamon.

  • Pour the wet banana mixture into the bowl with the dry ingredients and mix thoroughly to combine.

  • Pour into rectangular baking tin (21x10cm) and sprinkle with blueberries and pumpkin seeds.

  • Bake for 40 minutes at 175°C.
