Raw Thai Summer Rolls With Peanut Sauce

Ingredients:

Rice Paper Rolls:

  • 10-12 rice paper sheets
  • 1 carrot
  • 1 yellow capsicum
  • 1 avocado
  • 1 bunch sprouts
  • 1/4 red cabbage
  • 1 bunch cilantro
  • 1/3 cup raw cashwes
  • 1 cup vermicelli noodles (soaked)
  • 1 cup fresh strawberries
  • 1 cup fresh mango
     

Method:

  1. Slice vegetables into very thin strips
  2. Slice the mango also into strips and cut the strawberries into heart shapes
  3. Wet the rice paper sheet and place it on a damp paper towel
  4. Wait until the sheet softens
  5. Place the filling in the middle of each sheet and fold the bottom half of the rice paper wrapper over the filling
  6. Then fold the sides in and finish rolling up the whole wrapper thightly
     

Peanut Sauce:

  • 1/2 cup raw peanuts
  • Juice of 1 lime
  • 2 dates (soaked & pitted)
  • 1 tablespoon coconut aminos
  • 1/4 cup water
  • 1 tsp coconut sugar
  • 1 tbsp coconut vinegar
  • 1 tbsp coldpressed coconut oil
  • 1/2 small fresh red chilli
  • 1/2 tsp sesame oil (optional)
     

Method:

  1. Add all ingredients to a high speed blender and blend until smooth
  2. Taste the paste and add more lime/vinegar to taste
  3. Add more water if you want a thinner sauce
